About Facilitator
Tajah Ellis is a bio-designer engaged with the regenerative mechanisms of organic life. Although her primary medium centers textiles and fibers, her practice extends into fermentation, inoculation, and excavation. Drawing on ancestral techniques while responding to contemporary conditions, her research-driven, process-based approach, transforming plant matter through circularity.
Objective
Considered the “champagne of kombucha”, Jun (joon/xun) is a lighter, aromatic ferment made from green tea and honey. Artist Tajah Ellis will facilitate this session by activating SCOBY’S with locally sourced herbs and honey from Bee U NYC and Field Meridian’s Team. We will experiment with different flavor compositions in considerations of seasonal pairings. This will be a hands-on workshop, where participants are welcome to include their own knowledge, herb practice and ecology-based nuances.
There will be readily made Jun’s for sale / to taste <3!
